With fewer than 10 ingredients, and ready in under 10 minutes, my easy apple, pineapple, and coconut ambrosia is creamy, sweet, fruity, and nutty. And tastes utterly divine! It's also dairy-free, oil-free, gluten-free, and contains no refined sugars.
Goodness, what a week this has been - and not all entirely good, either!
We flew to Britain, we celebrated Mummy's 80th birthday. Twice - once on the day, with afternoon tea at amato mio's sister's, and secondly on Sunday at Mummy's garden party, with 40 other guests, plus a marquee in the garden, complete with caterers. It was all rather Downton Abbey!
It was lovely to catch up with friends and la fam.
We also went to Kent to see l'offspring, and had a lovely time, chatting, and of course, playing with Raven. It was her first birthday a few weeks ago, and she's toddling about all over the place, into all the things. Fortunately, she did stay still long enough for me to snap a few pics!
Unfortunately, during the early hours of Friday morning, I was rushed into hospital with crushing chest pains. Several ECGs, blood tests, and X-rays, and a whole load of drip-fed morphine later, I was discharged, with instructions to visit my GP for further tests. While it wasn't a mild heart attack (nor inflamed lungs or a blood clot), the doctor said that there could be a blockage in one of the chambers of my heart. Or it might be angina.
Ho hum.
And if that wasn't cr@ppy enough, on Monday evening, I got sick from food poisoning.
I know, right!
I was still feeling absolutely horrendous during our early morning flight back to Slovenia on Tuesday. I went straight to bed as soon as we got home, and slept for most of yesterday too. I'm more or less recovered but I feel completely ravaged, and very far from being my best. It's been a horrible few days, and I really can't wait until I'm well enough to be able to go out for walks, and get fit again.
Not least because in three weeks we'll be moving to Romania, and I have so much I need to get done before then.
Anyway, enough of all that - you came here for amazing puddingy deliciousness, right? 😉
A while back, when I first got my Spiralizer, I bought a copy of Inspiralized by Ali Maffucci, and flicking through it recently, I came across her recipe for Apple Ambrosia Fruit Salad.
To be honest, it sounded far better than it looked in the accompanying image (which was a bit like a fruity coleslaw), so I messed around with it (as you do), and the result was this insanely gorgeous vegan pudding.
This ambrosia is creamy and sweet (without being sickly), fruity and nutty, ready in fewer than ten minutes, and is the perfect way to end a meal.
It's especially good if your main course happens to have been spicy!
Spiralising the apples works really well; because they're paper thin, and take on the flavours of the coconut, orange juice, and the pineapple, while still remaining... well, apple-y.
Ali's recipe calls for pecans, which I have no hope of sourcing in our tiny Slovenian village. Walnuts, yes, pecans, not a chance. I might have found them in Ljubljana but let's be honest here, I really didn't fancy a trek into the city on the off chance I might find some horribly expensive nuts... not when I can use raw cashews instead.

Easy Apple, Pineapple, and Coconut Ambrosia
Ingredients
- 1 silken tofu note 1
- ½ canned coconut milk
- 1 vanilla pod seeds only (or 1 teaspoon vanilla extract)
- 3 tablespoon orange juice
- 2 tablespoon maple syrup
- 150 g fresh pineapple cleaned and chopped
- 100 g raw cashews chopped (keep a few back for garnishing)
- 1 large sweet apple spiralised or chopped into small pieces
- 15 g desiccated coconut (keep a little back for garnishing)
Instructions
- In a blender, blitz the tofu, coconut milk, vanilla seeds (or extract), orange juice, and maple syrup for a few seconds, until you have a smooth cream.
- Place the spiralised (or chopped) apple, plus the pineapple, and most of the chopped cashews and desiccated coconut into a large bowl, then pour over the cream mixture.
- Gently fold everything together, making sure everything is well-coated.
- Spoon into four serving glasses or dishes, sprinkle over the rest of the coconut and cashews, and serve immediately.
- This will also keep in the 'fridge for up to 24 hours, and actually tastes even better on the second day!
Notes
- If you don't want to, or can't use soy, use coconut cream instead. Alternatively, make coconut cream by chilling a can of full-fat coconut milk overnight, scooping out the thick, solid part, and then whipping it.
- If you're going to use coconut cream, omit the half can of coconut milk, and just use the whipped coconut cream instead.

This is an awesome recipe, it looks so decadent yet it's so easy to make, yum! It would make a perfect dinner dessert for entertaining friends. I've never tried spiralizing apples yet, they look so pretty, I must have a go!

It's so easy to spiralise them, Vicky but they do come out like bunting, so you may want to cut the ribbons up a bit... unless you're like me, and easily amused by your beloved trying to twirl ribbons of apple around his spoon!
