Of course, were Lord Percy to have dipped into a cauldron of my easy-peas-y piquant (pea-quant... yeah, I'm on a roll) pea soup, he would have been enthusing about a bowl of purest green instead. And quite rightly so, for this deliciously warming pea soup is the stuff of legend. Honest.
Quick 'n' Easy Vegan Piquant Pea & Leek Soup
Winter is coming, and with it, the season of hearty casseroles and comforting soups. Despite it still being November, as I type this, we are on day two of non-stop snowfall; every roof in the village is white, and my once-productive vegetable garden, which kept us fed throughout the summer and early autumn, now sleeps under a fluffy white blanket.
Picture me sitting in front of a roaring fire, cupping a steaming bowl of pea soup in my (asbestos-lined) hands, while outside the wind blows a gale, and the snow falls in drifts.
(It’s a much more romantic image than my reality of modern radiators, and the sound of the occasional horse-drawn cart being driven along a slushy road!)
Nevertheless, this is the kind of soup that makes you want to curl up in front of a fire, and wrap yourself in winter cosiness, so I say do it!
Not least because this is a total dump soup... dump the ingredients into a pan; cook, blitz, done. Told you it was easy. Go and make some right now, I promise you won’t regret it!

Quick 'n' Easy Vegan Piquant Pea & Leek Soup
Ingredients
- 1 large leek weighing around 400g (c.15 oz), washed, trimmed, and sliced
- 1 head garlic peeled and smashed
- 500 g frozen peas
- 1.5 litres vegetable broth
- 1 teaspoon Chilli flakes (gochugaru), plus a little extra for finishing
Equipment:
- large saucepan or stockpot
- blender
Instructions
- Place all the ingredients into a large saucepan or stockpot, and bring to the boil.
- Reduce heat, and simmer for 20 mins or so, until the leeks are soft.
- Remove from the heat, and blend until smooth.
- Divide into bowls, sprinkle with some extra chilli flakes, and add some croutons if desired.
- This Quick 'n' Easy Vegan Piquant Pea & Leek Soup will keep in an airtight container in the 'fridge for up to a week, and freezes well too.
Notes
- Gochugaru is pretty mild but if you're in any way concerned, just add half a teaspoon to the soup to begin with, taste, and then add more if it's not spicy enough. Similarly, do feel free to add more from the outset if you're not a chilli wimp like me!
- 1 cup = US cup = 240 ml
- 1 tablespoon = US/UK = 15 ml
- 1 fl oz = US = 30 ml

Hey! Since it's the beginning of spring (although it doesn't look like it) I started to hoard up tons of veggies. I'm pregnant and winter took a toll on my hubby's fit body haha I decided to put aside good old grandma recipes and try something healthy. Soups are always my weakpoint so I needed to look up some new ideas. I've only seen leek paired up with potatoes. This recipe was quite refreshing and extremely delicious, thank you!!

TBH, Jacqui, I've only ever heard of dump cakes but since this really is a case of dumping everything in the pan, I thought 'dump soup' as a descriptor worked really well! Who knows, maybe dump soups will become a thing now! 😉 xx
