This quick 'n' easy vegan piquant pea & leek soup is made with just five everyday ingredients, and is as delicious as it is beautiful to look at! It requires no fancy-schmancy techniques, and is pretty much guaranteed to be loved by all.
Place all the ingredients into a large saucepan or stockpot, and bring to the boil.
Reduce heat, and simmer for 20 mins or so, until the leeks are soft.
Remove from the heat, and blend until smooth.
Divide into bowls, sprinkle with some extra chilli flakes, and add some croutons if desired.
This Quick 'n' Easy Vegan Piquant Pea & Leek Soup will keep in an airtight container in the 'fridge for up to a week, and freezes well too.
Notes
Gochugaru is pretty mild but if you're in any way concerned, just add half a teaspoon to the soup to begin with, taste, and then add more if it's not spicy enough. Similarly, do feel free to add more from the outset if you're not a chilli wimp like me!
